Malpua, locally known as Amalu in Odisha, is a sacred and traditional sweet that has been cherished in Odia culture for centuries. More than just a dessert, Amalu carries deep cultural and spiritual significance and is traditionally offered as part of the famous Chhappan Bhog (56 Bhog) to Jagannath at the revered Jagannath Temple.

In the temple traditions of Puri, Amalu is prepared in three traditional sizes — Sana Amalu (small), Madhyama Amalu (medium), and Bada Amalu (large). The batter is made from wheat flour, ripe banana, and aromatic fennel seeds, which gives the sweet its distinctive flavor and naturally soft, slightly chewy texture.

This sacred sweet is traditionally offered during the Sandhya Dhupa ritual at the Jagannath Temple and later distributed among devotees as blessed Prasad. Because of this deep-rooted tradition, Amalu is considered one of the most culturally significant sweets of Odisha.

Over time, this classic sweet has inspired several popular variations across the state. One such variation is Dahi Amalu, where freshly fried Malpua pieces are soaked in lightly sweetened yogurt, creating a refreshing and juicy dessert. Another popular preparation is Rabidi-Malpua, commonly enjoyed in cities like Bhubaneswar and Cuttack, where Malpua is served with rich rabidi and enjoyed during festive occasions and street food gatherings.

What makes Odisha-style Malpua (Amalu) unique is its traditional recipe. Unlike many North Indian versions that use refined flour and khoya, the Odia style relies on banana and wheat flour, resulting in a naturally soft texture and the characteristic aroma of fennel seeds.

Today, many modern versions of Malpua are available in the market. However, we continue to follow the authentic traditional preparation, preserving the original taste and heritage without unnecessary experimentation.
